The culinary tour in the Atlas Mountains will begin from Marrakesh, and you will have a shared class at an Imlil guesthouse beneath Mount Toubkal. You will learn how to cook tajine, also known as maraq, a slow-cooked savory stew made in earthenware pots. This dish is usually made with sliced meat, poultry or fish that would be mixed together with vegetables or fruit. Local cooks often add to it spices, such as ginger, cumin, turmeric, cinnamon, saffron, paprika and chili, as well as nuts and dried fruit. Another dish that you will master will be couscous, a Berber dish of small steamed balls of crushed durum wheat semolina that is traditionally served with a stew.
